During this workshop we will explore the magic of fermentation. Cabbages are notoriously hard to digest for most people. Microbes to the rescue!

Various lactic acid bacteria, including Leuconostoc, Lactobacillus, and Pediococcus are used to process sugars into lactic acid, alcohols and other hydrocarbons. These combine into esters, giving the sauerkraut its unique flavor. Sauerkraut is much easier on the human digestive tract allowing us to benefit from the full nutritional spectrum of the cabbage. Originally the process is meant as a way to preserve vegetables for winter time, but there are many culinary and health advantages too.
You will discover that sauerkraut making is very easy and a tactile, even sensuous experience. It involves simple tools and ingredient that you probably already have in your kitchen.

To finish off we will have a delicious sauerkraut tasting.
Sauerkraut isn’t simply a great way to enjoy good food during winter time but also very refreshing in summer. You can make and enjoy sauerkraut all year round.
